Crispy Cheesy Breaded Chicken Tenders
Okay, so I’m going to give you a super hot tip. Don’t do what I did, and only make one batch of these. Make 2. Even if you don’t eat them all that night, you can have some for lunchboxes, a salad topping, or a just a grab-out-of-the-fridge-and-nosh kind of deal.
These breaded chicken tenders are kicked up a notch with the addition of Moon Cheese. I recently went to Chicago for the Sweets & Snacks Expo, and I was intrigued to try Moon Cheese, and to meet the folks who make it.
There was much less talking, and a lot more sampling at this booth, because, guys, CHEESE. I ate all the flavors, and then I went and ate another round, because…. again… CHEESE!!

And here’s the recipe for theCrispy Cheesy Breaded Chicken Tenders!
- 1.5 lb chicken tenders
- 1 cup flour
- 2 eggs , beaten
- 1.5 cups plain breadcrumbs
- 1 package Cheddar Moon Cheese
- Cooking oil
Season the chicken tenders on both sides.
In three shallow dishes, place the flour in one, the eggs in another, then in the third – the breadcrumbs.
In a ziplock bag, crush the package of moon cheese in chunky crumbs.
Mix the moon cheese into the breadcrumbs.
Dip in flour, then egg, then in breadcrumbs.
Heat cooking oil in a large skillet over medium-high
Cook in batches (don’t crowd the skillet!) on both sides until internal temperature reaches 165F
