A fantastic weeknight meal, this Chicken Caprese recipe is juicy seasoned chicken with mozzarella, tomatoes and basil layered over the top!
Combine the olive oil, garlic & onion powder, salt & pepper in a large bowl until well mixed. Add the chicken cutlets & coat thoroughly.
Heat a large cast iron skillet & cook the chicken (about 5 mins per side) until fully cooked & golden brown. While the chicken cooks, make the glaze.
Remove from the heat & top each chicken breast with mozzarella slices. Put the skillet in the oven for a few mins to melt the cheese.
Remove from the oven & top with tomato slices, drizzle with glaze & sprinkle the basil.
