Crockpot Chicken Stew (Country Style)

Crockpot Chicken Stew is a comforting, all season dish filled with healthy ingredients and bursting with flavor!

INGREDIENTS

In a skillet, cook the onion, celery and carrots. Add in the garlic and cook. Add to the slow cooker. 

Trim chicken thighs, cut into smaller pieces. Season the chicken with the salt and pepper, then dust with flour.

Heat remaining oil in the skillet over medium-high heat, cook thighs until browned on both sides. Add to the crockpot.

Pour chicken stock into the skillet. Bring to a boil, then whisk in the mustard and dried thyme

Pour the sauce over the ingredients in the slow cooker. Mix well. Cover and cook. Mix in cornstarch mixture. 

Devour with mashed potatoes or rice!
