Twice  Baked  Potatoes

A drool-worthy side dish, these Twice Baked Potatoes are SO good! Make a lot and freeze some for another day 👉

INGREDIENTS

Scrub the potatoes, then bake potatoes using your preferred method. You can microwave them too (directions below). When cool enough, slice the potatoes in half.

Scoop out the centre

Scoop out the center of the potatoes so you are left with the skin & little potato on the edges. Add the potato to a bowl.

MASH THE POTATOES

Mash with butter & milk. Add salt & pepper to taste. Fold in the bacon, cheddar cheese & green onions.

add MASHED POTATO INTO THE SHELL

Scoop the mashed potato mixture back into the potato shells & top with remaining cheese.

COOK

Place each potato  on a baking sheet & cook until cheese melts & potatoes are heated through.

FREEZE

If freezing, wrap each stuffed potato individually in plastic wrap & freeze. On cooking day, thaw completely, then bake as directed adding a few extra mins.
