Spinach, Tomato & Feta Crustless Quiche

Spinach is the star of the show in this healthy low carb crustless quiche with tomatoes, onions & feta. This is a versatile & nutritious dish that is easy to make!

INGREDIENTS

– Olive oil – Onion – Fresh baby spinach leaves – Salt and pepper  – Eggs – All purpose flour – Baking powder – Milk – Feta cheese – Grape or cherry tomatoes – Fresh basil leaves ((optional, for garnish))

Heat olive oil in a skillet over medium heat & saute the onion until softened.

ADD THE SPINACH

Add in the spinach & cook until just wilted (you may need to do this in batches if your skillet is too small). Season with salt & pepper to taste.

WHISK TOGETHER

Whisk together eggs, flour & baking powder. Whisk in milk, then stir in the spinach mixture. Add pepper, mix well.

TRANSFER THE MIXTURE

Pour egg mixture into quiche pan. Top with feta. Place the tomato halves on top, and press gently so only the surface is visible!

BAKE

Bake for 25-30 mins, or until center is set & the edge is golden brown – & pulling away from the pan. Cool for 10 mins!

GARNISH & SERVE

Garnish with extra feta, and some basil (optional).  Slice, & serve!

KYLEE'S NOTES

This crustless quiche tastes great hot, room temp, OR chilled! You’ll notice there is no salt and pepper in this – the feta is plenty salty enough, so there’s no need to add it. You may enjoy some pepper in yours though!
