Sweet Potato Hash with delicious Southwest flavors that will delight your taste buds! You’ll make this yummy breakfast hash recipe over and over!
Dice the sweet potatoes, bell peppers and jalapenos. Slice the onions. Drain the black beans, but not the tomatoes!

Over medium heat, cook the sweet potatoes, turning regularly until browned & softened.

Add the red onions, bell peppers, and jalapenos & continue cooking for 5 mins stirring occasionally. Season with salt & pepper.

Serve topped with a fried egg, extra cilantro & avocado (optional).

This can go faster if you use pre cooked sweet potato!
Store in the refrigerator & reheat when needed. This is actually a really good recipe for meal prep!
