This is a yummy pastry pie shell filled with a custard-like filling that is rich, tangy, creamy…dreamy…heavenly!
In a large bowl, whisk together the eggs, buttermilk & vanilla & until thick & well mixed. In another bowl, mix together the sugar, melted butter, cornstarch & salt.

Combine the 2 mixtures & whisk until thoroughly blended. Pour the filling into the unbaked pie crust. Bake 55 mins.

Serve chilled or at room temp!
