A classic Irish favorite, packed with cabbage, bacon, and pure comfort. Super easy to make and super yummy to eat!
Cook the potatoes until tender. Drain them, then add in milk, butter, salt & pepper. Mash until smooth!
In a large skillet, cook the bacon until crispy. Remove and drain on paper towels.
Add cabbage to the skillet. Cook until the cabbage is wilted.
Combine the mashed potatoes, sautéed cabbage, and bacon together. Stir the scallions through.
Serve with remaining 2 tablespoons of butter.
Store in an airtight container in the refrigerator for up to 4 days. Reheat until it is piping hot!
