KYLEE COOKS
This traditional Irish Soda Bread Recipe is SO easy to make (no kneading!) & goes perfectly with a stew or soup.
Whisk together the flour, sugar, salt and baking soda.
01
Incorporate the cold butter into the flour mixture. Then, stir in the raisins & set aside.
02
In a bowl or measuring cup, beat together the buttermilk & egg until well-combined. Pour into the dry ingredients.
03
Mix until the dough forms, using your hands to knead if required.
04
Shape the dough lightly. Use a sharp knife to cut a deep cross in the center of the dough to allow steam to escape.
05
Bake for 45 mins (up to 55 minutes), until golden brown & an inserted toothpick comes out clean. Set on a wire rack, until completely cooled before slicing.
06
Don’t overmix the dough – it needs to be shaggy so you get the craggy crust Pat it into shape, don’t knead it to make it smooth. Shaggy is GOOD!
