  • 1 package VeeTee Long Grain Rice
  • ¼ cup basil pesto
  • 1 cup cherry tomatoes
  • 1 cup fresh mozzarella balls


  • ¼ cup fresh basil leaves.


  • ¼ cup fresh basil leaves.
  • Heat the rice as directed on the package.
  • Add the heated rice, and the basil pesto to a large bowl and stir to combine (add more if necessary).
  • Top with cherry tomatoes and fresh mozzarella balls.
  • Garnish with fresh basil leaves (optional)
  • Devour.
