- 1 package VeeTee Long Grain Rice
- ¼ cup basil pesto
- 1 cup cherry tomatoes
- 1 cup fresh mozzarella balls
- ¼ cup fresh basil leaves.
¼ cup fresh basil leaves.
Heat the rice as directed on the package.
Add the heated rice, and the basil pesto to a large bowl and stir to combine (add more if necessary).
Top with cherry tomatoes and fresh mozzarella balls.
Garnish with fresh basil leaves (optional)
