- 1 Tbs butter
- 1/2 cup red onion diced finely
- 1 cup water
- 1 cup fresh orange juice
- 1 cup quinoa
- ½ tsp salt
- ½ tsp pepper
- 4 tsp ginger crushed
- 4 tsp garlic crushed
- 1 Tbs cilantro minced
- 1/4 cup almonds blanched, toasted, sliced
- chopped fresh cilantro
- orange zest
Heat the butter in a small saucepan, and cook the red onion til it begins to soften.
Add the remaining ingredients to the saucepan, and bring to a simmer.
Place a lid on the saucepan, and turn the heat to low and cook until liquid is absorbed.
