Instructions
Heat the butter in a small saucepan, and cook the red onion til it begins to soften.
Add the remaining ingredients to the saucepan, and bring to a simmer.
Place a lid on the saucepan, and turn the heat to low and cook until liquid is absorbed.
Optional
Remove quinoa from the saucepan and garnish with almonds, cilantro and orange zest
