Fresh Ginger-Orange Scented Quinoa

Ingredients

  • 1 Tbs butter
  • 1/2 cup red onion diced finely
  • 1 cup water
  • 1 cup fresh orange juice
  • 1 cup quinoa
  • ½ tsp salt
  • ½ tsp pepper
  • 4 tsp ginger crushed
  • 4 tsp garlic crushed
  • 1 Tbs cilantro minced

OPTIONAL

  • 1/4 cup almonds blanched, toasted, sliced
  • chopped fresh cilantro
  • orange zest

Instructions

  • Heat the butter in a small saucepan, and cook the red onion til it begins to soften.
  • Add the remaining ingredients to the saucepan, and bring to a simmer.
  • Place a lid on the saucepan, and turn the heat to low and cook until liquid is absorbed.

Optional

  • Remove quinoa from the saucepan and garnish with almonds, cilantro and orange zest
  • Devour
