Make your own Peanut Butter Granola, and put yourself in charge of your own delicious breakfast or trail mix with this easy and tasty recipe. Perfect for breakfast, snacking or eating as trail mix!
Preheat the oven to 325 degrees F and line a sheet pan with parchment paper. Set aside.
Make the granola
In a large microwavable bowl, combine the peanut butter, maple syrup, and caramel syrup. Microwave for 30 seconds and stir well (you can do this on the stove top too - be careful not to burn).
Stir in the vanilla extract, cinnamon, and nutmeg.
Add in the rolled oats, salted peanuts, and sliced almonds. Stir everything thoroughly until well coated. If you find the peanut butter mixture has cooled, it will make it more difficult to incorporate the oats. If that is the case, add in an additional 1-2 tablespoons of maple syrup or some melted coconut oil to help with this.
Bake and cool
Spread granola evenly onto the sheet pan.
Bake in the oven for 20 minutes, stirring just one time.
Remove from oven and sprinkle on the coconut flakes and bake for another 3 minutes or until golden brown.
Once done baking, let cool and harden before adding in the dark chocolate chips and sea salt, totally optional.
Allow the granola to cool completely before breaking it up and serving or storing granola.

How do I know when this granola is done?This granola can overcook easily if you have thin edges on the sheet pan. I would recommend making sure that the granola is spread evenly on the bottom of the pan, but not too thinly. It should be a golden brown when done. If it is too soft, you can bake it for an additional 3-5 minutes. It will harden as it cools. How do I store my granola?Seal in an airtight container and keep at room temperature for up to one month. They can be frozen and stored in the freezer for up to 1 year.
