Peel the potatoes and cut into fries. Soak the fries in a large bowl of cold water for 30 minutes.
Rinse the fries and place on paper towels and pat as dry as possible.
Line a large sheet pan with parchment paper.
Cook the fries
Place the fries in a single layer on the prepared sheet pan, and drizzle with vegetable oil, mixing to ensure each fry is coated.
Season with seasoned salt, oregano and pepper.
Bake 45 minutes to 1 hour, turning the fries halfway through.

Place cooked fries on a serving platter, and sprinkle the tomatoes, feta, olives, and onion over all the fries.
Squeeze lemon juice over the top and serve with tzatziki.
