Ingredients

  • 1 deep-dish pie shell thawed

For the filling

  • 1 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup cornstarch
  • 1 Tbs instant coffee granules
  • 1/2 tsp salt
  • 2 3/4 cups whole milk
  • 2 Tbs Kahlua
  • 1 Tbs butter
  • 1 tsp vanilla extract

For the topping

  • 1 cup heavy whipping cream
  • 1 Tbs powdered sugar
  • ½ tsp vanilla extract
  • pinch salt

Instructions

  • Bake pie shell according to package directions (typically, thaw for 15 minutes – bake for 12-15). Remove from the oven, and let cool.
  • Combine sugar, cocoa, cornstarch, instant coffee and salt.
  • Whisk in the milk.

MICROWAVE

  • Cook on high for 6-8 minutes, stopping every 2 mins to stir. It needs to be bubbling for around 2 minutes. 
  • Whisk in the kahlua, butter, and vanilla until well blended. Pour into pie crust and chill for 30 minutes.

STOVETOP

  • Cook over medium heat 6 to 8 minutes, until mixture comes to a boil. Allow to bubble for about 2 minutes, then remove from heat.
  • Whisk in the kahlua, butter, and vanilla until well blended. Pour into pie crust and chill for 30 minutes.

For the topping

  • Beat together the cream, powdered sugar, vanilla and salt until you have stiff peaks.
  • Spread over the center of the pie, leaving a little around the edges.
  • To serve
  • Sprinkle a little cocoa powder over the top of the whipped cream.
  • Devour.
