Crispy Breakfast Potatoes (Potatoes O’Brien)

Potatoes O’Brien are the best skillet potato side dish recipe for a holiday dinner or christmas!

INGREDIENTS

Peel the potatoes & cut them into small, bite-sized cubes. Dice the onion & bell peppers.

Add the garlic powder, paprika, thyme, salt & pepper to a bowl & mix together.

Place the potato cubes in a pot of cold, salted water. Bring the water to a boil & let the potatoes cook for about 3-4 mins.

Drain the potatoes & pat them dry with a paper towel.

Cook the onions and bell peppers for 2-3 mins until they start to soften.

Add the potatoes to the skillet with the peppers & onions.

Add the seasonings. Cook without stirring for about 5 mins or until the potatoes develop a crispy, golden-brown crust on one side.

Serve immediately with other breakfast items like eggs, bacon, sausage etc.
