5 Ingredient Carrot Soup Recipe

A very simple but amazingly full-flavored, warming and satisfying Carrot and Cilantro Soup, guaranteed to make you want to make this every single day!

INGREDIENTS

Heat olive oil over medium-high heat in a large soup pot or Dutch oven.

Cook onion, garlic & cilantro roots & leaves. Add carrots & cook for a couple of mins. Season with salt & pepper.

Deglaze the saucepan with a little stock. Bring to a boil Cook until the carrots are tender.

Once the carrots are soft, puree the soup in a blender so that it is nice & smooth.

Check seasoning & adjust if needed. Garnish with sour cream & a fresh cilantro.
