Combine 2 cups fresh blueberries, 3 tablespoons honey and 1 tablespoon fresh lemon juice in a heavy bottomed saucepan, and heat over medium heat until the berries begin to "pop" (about 5 minutes).
Stir 2 tablespoons chia seeds in, and bring the mixture to a boil.
Turn the heat to low and simmer for 2 minutes.
Remove from heat, and cool (to room temp) before using.
