Heat the 2 tablespoons vegetable oil in large skillet over medium-high heat.
Mix together 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, 1 teaspoon salt, and ½ teaspoons cracked pepper in a small bowl.
Whisk together 2 cups chicken stock, 2 tablespoons soy sauce, and 2 tablespoons apple cider vinegar.
Rub the 3-4 pound pork loin with the mixed seasoning, and brown on all sides.
Add 2 onions(quartered) and 2 apples(peeled, cored and quartered) to the crockpot, add the browned pork loin on top.
Pour in the stock, soy sauce & apple cider vinegar, place the lid on the crockpot and cook for 8 hours on low.
Remove pork loin and apples/onions from the crockpot.
Allow to rest for 10 minutes, then slice.
Serve with the onions, apples, and gravy.
Devour.
TO MAKE GRAVY IN THE CROCKPOT
Remove all but 2 cups of liquid. In ½ cup of the removed liquid, whisk in 3 tablespoons corn starch until smooth. Whisk back into the crockpot, and heat on high for 15 minutes.
Whisk constantly until thickened.
TO MAKE GRAVY ON THE STOVETOP
Remove 2 cups of liquid and add 1 ½ cups to a small saucepan, heating over medium-high heat.
In the remaining ½ cup of the liquid, whisk in the cornstarch until smooth, then add to the saucepan, whisking until thickened.
