Get prepped
Dice 1 onion, slice up 2 cups mushrooms, and mince 2 garlic cloves.
Cook
In a large skillet or frying pan, melt 2 tablespoons butter over medium heat. Add the chopped onion and cook until it becomes translucent, about 2-3 minutes.
Add 1 pound ground beef to the skillet and cook, breaking it apart with a spatula, until it's browned and cooked through. Drain any excess fat if necessary.
Stir in the sliced mushrooms and minced garlic. Continue cooking for another 2-3 minutes until the mushrooms soften.
Pour in 2 cups beef stock, 1 tablespoon Worcestershire sauce, and 2 teaspoons Dijon mustard. Stir well to combine all the ingredients.
Bring the mixture to a simmer, then reduce the heat to low. Let it simmer for about 10 minutes, allowing the flavors to meld together.
Remove from heat, stir in 1 cup sour cream and season with salt and pepper to taste.
Notes
If the sauce seems too thick, you can add a splash of beef broth or water to achieve the desired consistency.
Serve the ground beef stroganoff over cooked egg noodles or rice.
Garnish with chopped fresh parsley if desired.
