Light, fluffy lemon muffins made with simple ingredients and just enough citrus flavor to feel bright without being sharp. These are everyday, grab-and-go muffins with a tender crumb and a sparkly top. Get prepped. Heat the oven to 375°F (190°C). Line a standard 12-cup muffin tin with liners or lightly grease it. Zest and juice the lemon. Melt the butter and let it cool slightly. Measure out the remaining ingredients.
Mix the dry ingredients. In a large bowl, whisk together the flour, granulated white sugar, baking powder, and salt until evenly combined.
Mix the wet ingredients. In a separate bowl, whisk together the melted butter, eggs, milk, lemon zest, lemon juice, and vanilla extract until smooth.
