A yummy one-pot meal that is super easy to make! Pasta Fazool is healthy comfort food that satisfies the whole family using commonly found ingredients!
Heat 1 Tbs olive oil in a large Dutch oven over medium-high heat. Add 1 pound ground beef or sausage, stirring occasionally until cooked through. Remove meat from the pot, and drain the fat off.
Heat remaining 2 Tbs olive oil in the Dutch oven. Add 1 diced onion, 2 diced carrots, and 2 diced stalks celery, and cook until veggies are softened.
Add 5 cloves minced garlic and cook, stirring for 30 seconds.
Add 4 cups chicken stock, 3 cups tomato sauce, 15 ounces fire roasted tomatoes , 1 tablespoon Italian Seasoning, meat, and 1 cup dry pasta.
Bring to a boil, then reduce the heat and cover with lid.
Simmer, stirring occasionally for 15 minutes, or until vegetables are tender and the pasta is cooked.
Add15 ounces red kidney beans and 15 ounces cannelini beans, and cook a few minutes to allow the beans to heat through.
Season with 1/2 teaspoon salt and ¼ teaspoons pepper and sprinkle the ¼ cup fresh parsley over the top.
