Melt the 1 tablespoon butter, cook the 1 cup diced onion until softened, then add 2 teaspoons minced garlic. Cook 1 more minute. Season with salt and pepper.
Boil and simmer
Add the 26 ounces hashbrown potatoes, and 32 ounces chicken stock.
Bring to a boil, then reduce heat and simmer until the potatoes are soft.
Remove from heat.
Add cheeses
Whisk 4 ounces softened cream cheese and 2 ounces shredded cheddar cheeseinto the soup until it all melts.
Devour.
Notes
You can use sour cream or plain yogurt in place of cream cheese.
