Tender, juicy steak bites tossed in a bold, smoky cowboy butter sauce. Perfect for a quick weeknight dinner or an impressive dish to share with friends!
Mince the garlic. Chop the parsley and chives. Measure out the butter, lemon juice, Dijon mustard, smoked paprika, salt, black pepper, and red pepper flakes. Cut the 2 pounds sirloin into 1-inch pieces.
Make the cowboy butter
In a large mixing bowl, stir together the 1/2 cup butter, 6 cloves garlic, 1 tablespoon parsley, 1 tablespoon chives, 1 tablespoon lemon juice, 2 teaspoons Dijon mustard, 1 teaspoon smoked paprika, 1 teaspoon salt, 1 teaspoon black pepper, and 1/4 teaspoon red pepper flakes. Set aside.
Cook the steak bites
Heat the 1 tablespoon olive oil in a large skillet over medium-high heat. Add the steak bites and cook until browned, about 4 minutes. Transfer to a plate and set aside.
Combine with cowboy butter
Add half of the cowboy butter to the skillet. Cook until the garlic is fragrant, about 2-3 minutes. Return the steak bites to the skillet and toss them in the butter. Let cook for 1-2 minutes until warmed through.
Serve
Melt the remaining cowboy butter in the microwave in 30-second increments. Serve the steak bites with the melted butter on the side. Enjoy!

Notes
Use a meat thermometer to check the internal temperature of the steak bites. For medium rare, aim for 135-145°F.
• Let the steak rest for a few minutes after cooking to keep it juicy.
• To reheat the steak bites, use a microwave or air fryer for best results.
