Baked Pesto Salmon (Sheet Pan Meal)

Whip up a fancy meal without the fuss with our Pesto Salmon Sheet Pan Dinner. We take juicy salmon fillets, spread basil pesto on top & roast them with tomatoes, shallot & lemon slices.👉

INGREDIENTS

Place the filets skin side down on the baking sheet, season with salt & pepper & zest one lemon over the top.

Place a tbs of pesto over each filet, spread evenly using the back of a spoon or a butter knife.

In a mixing bowl, toss the tomatoes, shallots & 2 tbs of the pesto until they are well coated.

Cut the second lemon into thin slices & add to the bowl with the vegetables. Toss gently.

Spread the vegetables & lemon slices out on the tray, around the filets.

Place tray in the oven & bake for 12-18 mins until salmon reaches 145°F internally, or is pink & flakey throughout.

Squeeze juice from the leftover zested lemon over the cooked salmon.

Top with basil if desired. Serve immediately with extra pesto.
