Slow Cooker Lasagna Soup Recipe for Dinner

Slow Cooker Lasagna Soup is a delicious & convenient twist on traditional lasagna. It’s made in a crockpot, and super low effort! 👉

INGREDIENTS

Cook the ground beef or Italian sausage until browned. Drain excess fat & set aside.

Add chopped onion & cook until translucent. Add the minced garlic & cook.

Transfer the cooked beef, onion & garlic to the slow cooker.

Add diced tomatoes tomato sauce, beef stock, water, Italian seasoning, salt & pepper to the slow cooker.

Cover & cook on low heat for 4-5 hours or on high heat for 3-4 hours.

About 30 mins before serving break up the lasagna noodles & add them to the crockpot & stir.

Cover & continue cooking until the noodles are tender. Taste for seasoning & adjust if necessary.

Ladle the soup into bowls. Top with a dollop of ricotta cheese, sprinkle with mozzarella, basil & parmesan cheese.
