This easy black bean salad recipe is packed with vibrant colors and bold flavors! It’s a satisfying main dish, or side dish with a healthy twist making it the ultimate plate of yum!
Combine 3 tablespoons fresh lime juice, 2 tablespoons olive oil, ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon cumin, ½ teaspoon kosher salt and ¼ teaspoon black pepper in a bowl and whisk until well combined. You may also use a jar with a lid and shake vigorously. Refrigerate.
Make the salad
In a large bowl, add 1 can black beans, 1 can sweet corn, 1 cup red bell pepper, ¼ cup red onion, 1.5 tablespoons jalapeno and ½ cup fresh cilantro.
Mix until well combined. Shot of mixed bowl with ingredients well combined.
