Ingredients

cups
butternut squash
peeled and cut into cubes (see note for how to make this easy)

cups
vegetable stock

cup
onion
diced
1
cup
apple
peeled, diced
1/2
teaspoon
salt
1/2
teaspoon
cracked pepper

pinch
nutmeg
Instructions
Add all ingredients to a large pot, or dutch oven.
3 cups butternut squash,
4 cups vegetable stock,
1 cup onion,
1 cup apple,
1/2 teaspoon salt,
1/2 teaspoon cracked pepper,
1 pinch nutmeg
Bring to a boil and simmer for 15 to 20 minutes, or until the squash is tender.
Using an immersion blender, puree the soup.
Taste for seasoning, and adjust if necessary.
Devour.
