This creamy, dreamy Cauliflower Cheese Soup recipe is serious comfort food, and as a bonus - it comes with a dose of vegetables! Done in under 30 minutes, it's a cheesy, family-friendly hearty soup, perfect for cold days when all you want is a hot bowl of something good!
Melt 2 teaspoons butter and sauté 1 large onion(chopped finely) until soft (5 mins).
Add 1 large cauliflower(cut into florets), 1 large potato(peeled and diced), 3 cups chicken stock, 1 2/3 cup milk, and salt and pepper. Bring to boil and simmer for 30 minutes.
Using a stick blender, blend until smooth adding a little more milk if it is too thick.
Cool to freeze, or stir in 3 1/2 ounces cheddar cheese just before serving.
If freezing
Thaw, then warm on stove or microwave until heated through. Stir cheese in just before serving.
