Grilled Chicken Satay Skewers (with Peanut Sauce)

Ingredients
For the chicken

chicken tenders
1
tablespoon
olive oil

honey

tablespoon
soy sauce

tablespoon
ground ginger

curry powder

garlic

For the Peanut dipping sauce
1
cup
peanut butter
14.5
ounces
chicken stock
1/4
cup
lime juice fresh

dark brown sugar

fresh ginger
peeled, grated

crushed red pepper flakes
Instructions
For the chicken
Thread
1 pound chicken tenders
on skewers (soak the skewers in water for 30 minutes first)
Mix the rest of the ingredients in a shallow pan.
1 tablespoon olive oil,
1 tablespoon honey,
1 tablespoon soy sauce,
1 tablespoon ground ginger,
1 tablespoon curry powder,
1 tablespoon garlic
Coat skewered meat with marinade, and allow to marinate 30 minutes
Grill or Broil chicken skewers until done
Serve with Peanut dipping sauce
For the Peanut dipping sauce
Place
1 cup peanut butter
in heavy medium saucepan.
Slowly add
14.5 ounces chicken stock
, then all other ingredients
1/4 cup lime juice fresh,
3 tablespoons dark brown sugar,
1/2 teaspoon curry powder,
2 1/2 tablespoons soy sauce,
2 tablespoons fresh ginger,
1 teaspoon crushed red pepper flakes
Stir over medium heat until smooth and thick, about 6 minutes
