Assemble these chicken satay skewers and keep them in the freezer in my yummy marinade – ready to thaw and grill at a moment’s notice!
Grilling is great, but with many recipes, marinating time means that it’s harder to go from “what shall we grill” to “oh my yum” in a reasonable amount of time.
I made these a little while ago, and had them hanging out in the freezer doing good things (ie marinating) until we decided to pull them out and grill them this weekend.
The thing I love about pre-marinating things in the freezer, is that as the meat thaws, it marinates at the same time – giving you a really flavorful end result. I made the peanut dipping sauce for these, and it was the perfect complement to the marinade used in the chicken.
Just a quick thaw and then thrown on the grill while you whip up the dipping sauce – and you’re in business for dinner, or a heavy appetizer. I’ve even pulled these out the morning we go camping, and brought these along ready to grill when we get our camp set up.
Want more grilling recipes?
- Thread chicken on skewers (soak the skewers in water for 30 minutes first)
- Mix the rest of the ingredients in a shallow pan.
- Coat skewered meat with marinade, freeze.
- Thaw chicken skewers
- Grill or Broil chicken skewers until done
- Serve with Peanut dipping sauce
