This recipe is inspired by the classic baked brie, but in mini, grab-and-go form. I first made these as an appetizer for a Christmas party years ago, and they disappeared before I could even set the tray down. Since then, they’ve become a holiday tradition in my home.

- Crescent roll dough. A great shortcut for buttery, flaky bites. Use a full sheet if available, or press crescent roll triangles together. You can also use puff pastry dough or savory pie dough.
- Brie cheese. Soft and creamy, it melts beautifully. You can substitute with camembert.
- Cranberry sauce. Brings sweet-tart flavor. Both canned and homemade cranberry sauce work. I use whole cranberry sauce, but if you like it smoother, use the other kind (don’t use the jelly)
- Egg. Helps the dough turn golden brown when baked.
- Fresh rosemary sprigs. Adds a festive touch and aroma. Optional but pretty for presentation.

Get prepped: Preheat oven to 375°F. Lightly grease or spray a mini muffin tin or line with cooking spray. Cut brie into small cubes.
Cut the dough: Roll out the crescent dough on a lightly floured surface. If using crescent rolls, pinch seams together to form one sheet. Cut into 24 equal squares.
Assemble the bites: Place one dough square into each muffin cup. Press gently to fit.


Add a cube of brie to each cup, then top with a spoonful of cranberry sauce.
Egg wash: Brush exposed edges of dough with beaten egg for golden color.


Bake: Place in oven and bake for 12-15 minutes, until dough is puffed and golden.
Garnish: If desired, sprinkle with a sprig of rosemary before serving.

Ingredients
- 8 ounces brie cheese
- 8 oz crescent dough sheet (or crescent rolls)
- 1/2 cup cranberry sauce
- 1 egg (beaten, for egg wash)
- fresh rosemary (chopped, optional, for garnish)
