This creamy Million Dollar Chicken Casserole is a comfort food classic that is super easy to make! A great way to use up leftover chicken, you’ll have dinner on the table fast.

Instructions
Get prepped
If using fresh chicken, cook the chicken, cut into cubes or shred. Cook and crumble the bacon.
Soften the cream cheese (leave out at room temp for 15 minutes). Melt the butter.
Measure out the seasonings.
Make the cracker topping
Add 25-30 Ritz crackers to a zip lock bag, and use a rolling pin to crush the crackers until they are small but still chunky. Add cracker crumbles to small bowl, mix 3 tablespoons butter (melted) in.
Make the sauce
Add the 4 ounces cream cheese, ½ cup sour cream, 10.5 ounces condensed cream of chicken soup½ teaspoon onion powder, ½ teaspoon garlic powder, and ¼ teaspoon black pepper to the bowl of a stand mixer, or a large bowl (and grab your hand mixer).
Mix until well combined.
Fold in 1 cup cottage cheese, 4 cups cooked chicken and ½ cup cooked bacon
Assemble and bake
Preheat the oven to 350°F
Add the chicken and sauce mixture to a 8x8 casserole dish and spread out evenly.
Sprinkle the top with the 1 cup mozzarella cheese, add the cracker topping over the mozzarella.
Bake for 30-40 minutes until heated through and the sides are bubbling.
Serve
Remove from the oven and let cool for 5-8 minutes before serving.
Garnish with sliced green onions, if you’d like.
