Magic Cookie Bars, also known as Hello Dolly Bars, are a classic layered dessert made with a buttery graham cracker crust, chocolate chips, coconut, pecans, and sweetened condensed milk.

When I tested this version, I found that briefly pre-baking the crust made a big difference. It helps prevent a soggy bottom and gives the bars enough structure to hold together cleanly once sliced.

The rest is simple: layer everything in the pan, pour over the sweetened condensed milk, and bake until golden and set. The result is a rich, chewy bar with crisp edges and those classic chocolate-coconut layers in every bite.

Are Magic Cookie Bars the same as Hello Dolly Bars?

Yes. Magic Cookie Bars and Hello Dolly Bars are essentially the same dessert, and you may also see them called Seven Layer Bars. The name varies, but the basic idea is the same – a graham cracker crust topped with chocolate, coconut, nuts, and sweetened condensed milk, then baked until set.

What You Need to Make Magic Cookie Bars

Note: This highlights some ingredients. Full list is in the recipe card

  • Graham cracker crumbs. Use 1½ cups of pre-crushed crumbs, or crush about 10 to 11 full graham cracker sheets yourself. Pulse them in a food processor or crush them in a zip-top bag until fine and even.
  • Butter. Melted butter binds the crumbs and helps the crust set as it bakes. I use salted butter.
  • Semisweet chocolate chips. Semisweet keeps the bars from becoming overly sweet, but milk chocolate, dark chocolate, white chocolate, or butterscotch chips will all work. You can also use a combination.
  • Shredded coconut. Sweetened or unsweetened coconut both work. Sweetened coconut gives you a softer, sweeter result, while unsweetened keeps the bars a little less sweet.
  • Pecans. Pecans add crunch and a buttery flavor. Walnuts work well too, or you can leave the nuts out completely.
  • Sweetened condensed milk. This is what binds the layers together as the bars bake and cool. Make sure you use sweetened condensed milk, not evaporated milk.

How to Make Magic Cookie Bars

Magic Cookie Bars are all about the layers. Press the graham cracker crust firmly into the pan, then add each topping evenly so every bar gets a little of everything. Take your time drizzling the sweetened condensed milk all the way to the edges, then bake until the top is lightly golden and the center is set.

Make the crust. Stir the graham cracker crumbs and melted butter together until evenly coated, then press the mixture firmly into the prepared pan. Bake for 8 to 10 minutes, just until the crust is set.

Add the chocolate. Sprinkle the chocolate chips evenly over the warm crust.

Layer the toppings. Add the coconut in an even layer, followed by the chopped pecans.

Add the condensed milk. Slowly drizzle the sweetened condensed milk over the entire pan, making sure it reaches the edges and corners.

Bake. Return the pan to the oven and bake for 25 to 30 minutes, until the top is lightly golden and the center looks set.

Cool and slice. Let the bars cool completely in the pan. For the cleanest cuts, chill for at least 1 hour before lifting them out with the parchment and slicing into bars.

  • Don’t rush the cooling time. The bars continue to firm up as they cool, so cutting them too soon is the fastest way to end up with messy slices.
  • For the cleanest cuts, chill first. An hour in the refrigerator makes a big difference. Use a sharp knife and wipe it clean between cuts.
  • Keep the layers even. Try to distribute the chocolate, coconut, and pecans right to the edges so the corner pieces are just as good as the middle ones.
  • Watch the color, not just the clock. The bars are ready when the edges and top are lightly golden and the center looks set rather than wet.
  • Use parchment with an overhang. Once the bars are completely cool, you can lift the whole slab out of the pan before slicing.
  • Theyre rich. Sixteen bars from an 8×8 pan gives you a pretty generous serving. You can cut them smaller for a dessert tray or holiday cookie box.

How to Store and Freeze Magic Cookie Bars

Room temperature: Store the bars in an airtight container for up to 3 days. Keep them somewhere cool and away from direct sunlight.

Refrigerator: For longer storage, refrigerate in an airtight container for up to 5 days. Let them sit at room temperature for a few minutes before serving for the best texture.

Freezer: Once completely cool, wrap the bars well or place them in a freezer-safe container and freeze for up to 3 months. Thaw overnight in the refrigerator or for a few hours at room temperature.

Why Did My Magic Cookie Bars Turn Out Wrong?

The bars are too soft or won’t set

They may need more baking time, or they may simply need more time to cool. The center should look set before you remove the pan from the oven, and the bars will firm up considerably as they cool.

The bottom is soggy

The crust may not have been pressed firmly enough or pre-baked long enough. That short bake helps set the graham cracker base before the heavier layers go on.

The coconut browned too quickly

The pan may have been too high in the oven. Bake on the center rack and remove the bars once the top is lightly golden.

The bars fall apart when I cut them

They’re probably still too warm. Let them cool completely, then chill before slicing for cleaner, sturdier bars.

The condensed milk pooled in the center

It was likely poured too quickly or too heavily in one spot. Drizzle it slowly over the entire surface, including the edges and corners.

Ingredients
 

  • 1 ½ cups graham cracker crumbs about 10 to 11 full graham cracker sheets should give you 1½ cups of fine crumbs.
  • ½ cup butter melted
  • 1 cup semisweet chocolate chips
  • 1 cup shredded coconut I used the unsweetened, thread-like kind
  • ½ cup chopped pecans
  • 14 oz can sweetened condensed milk

Instructions

  • Get prepped. Heat the oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving an overhang for easy removal. Melt ½ cup butter and measure out all remaining ingredients.
  • Make the crust. Stir 1 ½ cups graham cracker crumbs and melted butter together until evenly coated. Press firmly into the bottom of the prepared pan, making sure the crust reaches the corners. Bake for 8 to 10 minutes, just until set. This quick bake helps prevent a soggy bottom and gives the bars structure.
  • Layer the filling. Sprinkle 1 cup semisweet chocolate chips evenly over the warm crust. Add 1 cup shredded coconut in an even layer, followed by ½ cup chopped pecans. Slowly drizzle an entire 14 oz can sweetened condensed milk over the top, working close to the edges so it soaks through evenly.
  • Bake. Return the pan to the oven and bake for 25 to 30 minutes, until the top is lightly golden and the center looks set, not wet or jiggly.
  • Cool and slice. Let the bars cool completely in the pan. For the cleanest slices, chill for at least 1 hour before cutting. Lift out using the parchment and slice into 16 bars.
