What is Blackened Seasoning?
It is a flavor packed spice blend, that creates a charred flavorful crust on food – typically used on seafood and chicken. It is on the spicy side, which you can dial up or down depending on your preferences.
Can I buy a blackening seasoning and just use that?
Yes, you can use a store-bought blackening seasoning if you prefer. The benefit of making your own is being able to adjust the flavors and heat/spice level to your liking.
Can I bake or air fry instead of pan-frying?
You can do whatever you want! Choose your favorite method, and run with it.
To bake: Preheat your oven to 400°F. Place the seasoned tilapia fillets on a lightly greased baking sheet. Bake for about 10 to 12 minutes, or until the fish flakes easily with a fork.
To air fry: Preheat your air fryer to 400°F. Lightly spray the basket and the fish with oil. Air fry the fillets for about 7 to 9 minutes, flipping halfway through. This method gives a nice crust without the need for extra oil.
What to serve with Blackened Tilapia
A good, solid potato dish like Funeral potatoes, some garlic parmesan risotto or a rice pilaf are good sides. If you need something green (and you do), go for my skillet roasted asparagus, or some sauteed green beans. Get a bit fancier, and do my Green Beans Almondine.
You could also go the fish taco route, and cut the fish into chunks and add them to tortillas with some fresh toppings.

STEP 1: Make the homemade blackened seasoning
In a small bowl, combine the smoked paprika, garlic powder, kosher salt, onion powder, black pepper, cayenne pepper, dried thyme, and dried oregano. Mix it well.

STEP 2: Blacken fish filets
Heavily season both sides of the tilapia filet with the seasoning. Using your hands, press the seasoning into the fish so it sticks to it.

STEP 3: Cook the fish
Heat the oil (olive oil, avocado oil or vegetable oil all work) in a nonstick or large cast iron skillet over medium-high heat. Add the tilapia to the pan and cook for about 3 to 4 minutes per side until the fish flakes is opaque and can be easily flaked with a fork.
Note: You want the pan to be hot, before you add the tilapia to the pan, to develop the crust.
Serve with some lemon wedges or squeeze some lemon juice over the top before serving.
Fish temperature: Tilapia is cooked when it turns an opaque white and is no longer translucent. To be extra sure, use a meat thermometer and check for an internal temperature of 145°F.

Frequently Asked Questions
What is the best kind of pan to use when cooking fish?
A well-seasoned cast-iron pan is the best option for getting a good crust on the fish and preventing it from sticking. If using a non-stick pan, ensure it is high-quality and fully heated before adding the fish.
Do I need to use fresh fillets, or can I use frozen ones?
Either frozen or fresh fillets work fine. If using frozen fillets, make sure they are fully thawed and dried off before seasoning and cooking.
Can I use other fish types?
Yes, this seasoning works well with any white fish like cod, halibut catfish and is delicious on salmon and shrimp too. Adjust cooking time and temperature if you are using thick pieces of fish to ensure that the seasoning doesn’t burn, and leave you with raw fish. Turn the heat down for thicker pieces of fish.
Kylee’s Notes
- Adjust the heat: go easy with the cayenne for a less spicy flavor.
- Pat the fish dry before seasoning to help the spices stick and prevent excess moisture in the pan.
- Use a well-heated pan to get a good crust on the fish.
- If the seasoning burns too quickly, reduce the heat slightly to avoid a bitter taste.
How to store leftovers
Refrigerator
Blackened tilapia should be stored in an airtight container in the refrigerator for up to 2 days. To reheat, place it in a skillet over medium heat and cover it. Flip the fish at minute two and cover again; check for an internal temperature of 145°F before eating.
