Get prepped
Mince garlic, chop parsley and chives, measure ingredients, and cut the steak into 1-inch cubes (bite size pieces). Pat the steak dry if it needs it. Dry steak will sear better!
Make the cowboy butter
Mix butter, garlic, parsley, chives, lemon juice, Dijon, paprika, salt and pepper, and red pepper flakes in a bowl. Set aside.


Cook the steak bites
Heat a large cast iron skillet (or other large pan) with olive oil over medium-high heat. Sear the steak pieces until browned, about 4 minutes. Transfer to a plate.


Combine with cowboy butter
Add half of the cowboy butter to the skillet. Cook for 2-3 minutes until garlic is fragrant.


Add the steak back in and toss in the melted garlic butter. Cook for 2 minutes until warmed.


Serve immediately
Melt remaining cowboy butter in the microwave. Serve with steak bites. Enjoy!

Use a meat thermometer to check the internal temperature of the steak bites. For medium rare, aim for 135-145°F.

Ingredients
- 2 pounds sirloin (cut into 1-inch pieces)
- 1/2 cup butter (room temperature)
- 6 cloves garlic (minced)
- 1 tablespoon parsley (chopped)
- 1 tablespoon chives (chopped)
- 1 tablespoon lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 teaspoon red pepper flakes

Directions
Get prepped
- Mince the garlic. Chop the parsley and chives. Measure out the butter, lemon juice, Dijon mustard, smoked paprika, salt, black pepper, and red pepper flakes. Cut the 2 pounds sirloin into 1-inch pieces.
Make the cowboy butter
- In a large mixing bowl, stir together the 1/2 cup butter, 6 cloves garlic, 1 tablespoon parsley, 1 tablespoon chives, 1 tablespoon lemon juice, 2 teaspoons Dijon mustard, 1 teaspoon smoked paprika, 1 teaspoon salt, 1 teaspoon black pepper, and 1/4 teaspoon red pepper flakes. Set aside.
Cook the steak bites
- Heat the 1 tablespoon olive oil in a large skillet over medium-high heat. Add the steak bites and cook until browned, about 4 minutes. Transfer to a plate and set aside.
Combine with cowboy butter
- Add half of the cowboy butter to the skillet. Cook until the garlic is fragrant, about 2-3 minutes. Return the steak bites to the skillet and toss them in the butter. Let cook for 1-2 minutes until warmed through.
Serve
