This applesauce muffin recipe does well as mini muffins. Check your muffins in half the usual cooking time, as they’ll cook faster than full sized muffins.

About Kylee Ayotte
I am a born and raised New Zealander (a Kiwi), now living in Phoenix, Arizona. I’m happily married to the love of my life – a hot American boy I met while traveling the world. I’m a mama to 2 awesome little boys and love red things, rugby, cheesecake, and bacon. Mmmmm. Bacon. Meet Kylee

Applesauce Muffins was a first for me, even though I bake every week. I assumed the flavor of applesauce would come through (I used Musselmans original unsweetened), maybe not prominently, but that I would taste it. In all honesty, my muffins look the exact same as the photo; and each and every ingredient is correct – triple checked. I cooked 5 minutes longer than the 15 stated because they were cream colored and “wet” (and my oven even runs 3 degrees high). Truthfully, if it weren’t for the sugar/cinnamon topping, the muffins would taste like plain cake… moist but very plain. (BTW, why is no vanilla called for?) I’m not unhappy I made them, but I won’t be using it again. Thank you for sending me your recipe at any rate. I like to try new bakes.
These muffins are moist but very little apple flavor
