Update: This recipe was originally published on March 5, 2012. It was republished with updated photos in December of 2023.

There are so many uses for a waffle iron beyond the traditional waffles that we make for breakfast. I use mine to make savory cornbread waffles, for hash brown cakes, and THIS brownie waffle deliciousness.

The biggest problem I have is not being able to make these rich, chocolate waffle iron brownies fast enough to keep up with the family! Everyone loves them, so as quickly as I make them, they get claimed immediately.

While I have used box brownie mix in the waffle iron, I have found that it is way too sticky and make a massive mess if you don’t modify the batter. So, if you want to use a box of brownie mix, add an extra egg.

I usually use our big Belgian waffle maker for these waffles, but they can be made in any kind of waffle iron. Be sure to spray really well.

FAQs

Can I use store-bought brownie mix?

Absolutely. Just add an extra egg.

Do you need to grease the waffle iron before adding the brownie batter?

Yes, and I kind of can’t stress this enough. It’s super important to grease the waffle iron even if it’s non-stick to ensure the brownies don’t stick and to achieve a crispy exterior.

What is the cooking time for brownie waffles?

Brownie waffles usually take about 3-5 minutes to cook, but this can vary depending on your waffle iron and how crispy you want your waffles to be.

How do you know when brownie waffles are done?

The waffles will generally stop steaming, and they will be firm and crispy to the touch.

Why you’ll love this

  • It’s easy. Nothing crazy, just whip up the batter and gather some toppings!
  • It uses common ingredients that you probably already have!

Kylee’s Notes

This recipe makes 6 square waffles in my waffle iron. In my big Belgian waffle iron, it makes 3. You will need a cup of batter vs the 1/2 cup I use in the smaller one.

How to store leftovers

Cooked and cooled waffles can be stored in a sealed container for a few days. To heat, pop in the oven or a toaster. Waffles can also be frozen (wrapped well) for up to 4 months.

Topping ideas

Whipped cream, sliced strawberry (or any fresh fruit), grated chocolate, vanilla or chocolate scooped ice cream, chopped nuts, maraschino cherries, chocolate sauce – anything!

Key Recipe Ingredients

Remember: this is just an overview and the why of the ingredients I choose here. The full list of ingredients and amounts is found in the printable recipe card below

  • Butter. I use salted butter.
  • Bittersweet chocolate.
  • Sugar. Plain granulated white sugar.
  • Eggs. I use large eggs.
  • Vanilla extract.
  • All purpose flour.
  • Baking powder. This will help the rise.
  • Salt. This will balance the sweetness.
  • Milk. I use 2% milk, but any kind of milk will work. Including plant based milks.

Preheat the waffle maker.

Make the Brownie Batter

In a large bowl, melt the butter and chocolate and stir until smooth.

Add in the sugar, and mix well.

Then add the eggs, vanilla, flour, baking powder and salt.

Whisk in the milk and mix until smooth.

Cook the Brownie Waffles

Spray the waffle iron with cooking spray or brush with vegetable oil (even if it’s nonstick, you’ll thank me I promise). Pour 1/2 cup of brownie batter in the waffle iron. Close the waffle iron, and cook until crispy – about 3 minutes, but up to 5 minutes depending on your waffle iron.

Repeat with the remaining batter.

Serve with scoop of ice cream, or whipped cream and chocolate chips.

Devour.

I have to say one of my favorite waffle recipes. But I am one person so alot to eat. Lol. The second time around I halved the recipe and then prior to measuring my flour i added 1 tsp of cornstarch, 1 tablespoon of cocoa powder then topped off with flour and a little less then half a cut of milk. Cornstarch helps chrisp up the waffles a little. Thank you so much for your recipe, I’ll be looking to see what else you have!
