That’s why I lean on recipes like this one. These Baked Pork Chops are fast, flavorful, and feel a little fancy – even on a busy Tuesday night. You only need a few pantry staples, one skillet, and 20 minutes – yes, 20! – to make it happen. Whether you’re feeding the family or just treating yourself, this recipe brings bold flavor with minimal effort.
The best part of this is that they’re pretty easy. We mix up the topping, and add it to the chops (seasoned with salt and pepper). Then, cook them for about 2 minutes in an oven proof skillet. Transfer the skillet to the oven and cook for about 6 minutes, then lightly broil the top until golden brown. And that’s really it!
And don’t worry if blue cheese isn’t your thing. This recipe is super adaptable. You can easily swap in feta, goat cheese, or even parmesan for a totally different twist. The topping is the star here – and it plays well with all kinds of cheese.
I totally scrape the skillet for the crusted breadcrumbs/blue cheese that got extra crispy in the oven. Not even ashamed.

Can I use bone-in pork chops?
Yes, but adjust the cooking time since bone in chops may need longer to cook.

- Blue Cheese. You can buy this pre crumbled, or crumble it yourself. Choose your favorite! I like gorgonzola and stilton
- Seasoned Salt. This is a seasoning blend, I suppose. It’s got salt, sugar, paprika, turmeric, onion and garlic
- Breadcrumbs. You can of course use packaged breadcrumbs, but in this recipe I do just throw some bread into the food processor. Makes a softer topping, that soaks up all the flavors, and causes extreme deliciousness. Panko breadcrumbs will make this extra crispy, but regular will work too.
- Olive Oil. You can use Extra Virgin or a light blend, either will work. You may need a little extra to get a crumb-able consistency, so keep the bottle out.
- Pork. Use thick cut loin chops, or bone in pork chops. Both are delicious. You just need to adjust cooking time. Pork should be 145°F in the middle (use a thermometer to check!)

How to Bake Pork Chops in the oven

Get prepped
Finely chop the parsley or green onions. Crumble the blue cheese. Measure out all ingredients.
Make the topping
In a small bowl, stir together breadcrumbs, blue cheese, parsley or green onions, seasoned salt, and cracked black pepper. Add the olive oil and mix until the mixture has a stuffing-like consistency. Set aside.


Season and top the pork chops
Season both sides of the pork chops with salt and pepper, then press the crumb mixture evenly over the top of each pork chop, gently patting it down to adhere.


Cook
Preheat the oven to 400°F and add olive oil to an oven-safe skillet.
Bake for 6-8 minutes, or until the internal temperature reaches 145°F.


Optional Broil and serve
Switch the oven to broil and cook for a couple of minutes until the topping is golden brown and the cheese starts to melt. Watch carefully to avoid burning!
Serve
Remove from the oven and let the pork chops rest for 5 minutes before serving.

- Let the pork chops rest for 5 minutes before cutting so they stay juicy.
- Use a meat thermometer to make sure they hit 145°F – no guesswork!
- If your pork chops are extra thick, they might need a couple more minutes in the oven before broiling.
- Broil with the oven light on and don’t walk away – the topping can go from golden to burned fast.
- Just use a a baking dish to bake in the oven.

Allow to cool completely, then store leftover baked pork chops in an airtight container in the fridge for up to 3 days.

- Use a meat thermometer to check the internal temperature of the steak bites. For medium rare, aim for 135-145°F.
- Pat the steak dry if it needs it. Dry steak will sear better!
- Let the steak rest for a few minutes after cooking to keep it juicy.

- 1 cup soft bread crumbs (this is fresh bread, shredded into crumbs)
- 1/2 cup blue cheese (crumbled)
- 1/4 teaspoon seasoned salt
- 1/4 cracked pepper
- 1 tablespoon olive oil
