Roasted Broccoli Recipe – Ready in 15 minutes!

Roasted Broccoli is the unsung hero of weeknight dinner sides. This easy recipe is hands-off and super delicious! If you want your family to eat broccoli and LOVE it, give this a try!
Do you ever forget to make a side dish, and sit down for dinner and think – aw man, I should TOTALLY have some green stuff on here? Me too. I struggle sometimes to get a full meal on the table in under 30 minutes, but try really hard to include all the right nutrients!
Sometimes it is as simple as throwing a bag of frozen peas in the microwave, which, although a wonderful choice, kind of lacks in the wow-factor-department.
Steamed broccoli is ALSO a fine choice (given that it contains fiber, Vitamin C and … protein), but if you want to kick the flavor up a notch, oven roasting is the way to go.

Meal prep
I love roasted broccoli when meal prepping. It keeps well, has such great flavor that is actually good hot or cold! (Here it is served with marinated grilled chicken and some quinoa – check out my post on how to cook quinoa).
This oven-roasted broccoli recipe contains two of my FAVORITE THINGS. Parmesan and garlic. I mean – how can you really go wrong?
Grab a couple of heads of broccoli, cut into florets – then drizzle with olive oil, a little garlic powder, season with salt, pepper, and parmesan cheese. With a cooking time of about 15 minutes (depending on how small your broccoli florets are), this is perfect!

- Broccoli. Fresh broccoli is best here. Frozen holds too much moisture and will steam instead of roast, so you won’t get those crispy edges we’re after.
- Olive oil. Helps the broccoli roast instead of dry out, and gives you those golden, slightly crispy edges.
- Garlic powder. Adds flavor without the risk of burning. You can use fresh garlic, just know it can burn at high heat, so add it carefully or later in the cooking process.
- Salt and pepper. Brings out all the flavor. I use kosher salt, and you definitely don’t want to skip this.
- Parmesan cheese. Totally optional, but it adds a salty, savory finish that’s really good with the roasted broccoli.

How to Roast Broccoli

JumpGet prepped: Preheat the oven to 450°F and cut the broccoli into small florets. Add to a rimmed baking sheet.
Drizzle with olive oil, Sprinkle garlic powder, Sprinkle salt and pepper. Toss gently so all the pieces are covered, then sprinkle with parmesan cheese.
Cook: Roast for 10-12 minutes. It’s done when the florets are still bright green – but a little charred on the edges.
Serve: Serve warm, and devour.

Kylee’s Notes
- You may use parchment paper, or spray the sheet lightly with oil to prevent sticking.
- This is a great recipe for mixing up. Like spice? add a little cayenne or crushed red pepper. Like fresh flavors? Add a little lemon juice after cooking for a super bright, fresh flavor.

Roasted Broccoli Recipe

Ingredients
- 1 pound broccoli fresh
- ¼ cup olive oil
- 1 teaspoon garlic powder
- ½ teaspoons salt
- ¼ teaspoons cracked pepper
- ¼ cup parmesan cheese shredded
Instructions
- Preheat the oven to 450℉ and cut 1 pound broccoli into small florets.
- Add the broccoli florets to a rimmed baking sheet (you may use parchment paper, or spray the sheet lightly with oil to prevent sticking)
- Drizzle with¼ cup olive oil sprinkle1 teaspoon garlic powder, ½ teaspoons salt and ¼ teaspoons cracked pepper and toss gently to distribute oil and seasonings, then sprinkle with ¼ cup parmesan cheese.
- Roast for 10-12 minutes. It’s done when the florets are still bright green – but a little charred on the edges.
- Remove from oven, and devour.

This looks great. I have wanted to try roasted broccoli for a while now, but we so rarely get fresh broccoli thanks to crazy prices. I am going to give this a try with frozen broccoli but the next time I do get my hands on some fresh stuff then I will be doing it that way. Looks really easy to make and I bet the parmesan cheese really boosts the flavor.
This is one of my all-time favorite side dishes! I love roasting veggies- especially when they get golden brown crispy bits like these. This is a great reminder to put these on my menu ASAP!
I absolutely love roasted broccoli with cheese. It’s perfect side. And such a easy way to serve your family delicious and healthy meal. I never added garlic in my roasted broccoli. Can’t wait to give your recipe a try.
I’m adding it to my menu for next week. I baked some this week, but it was frozen, so I just added cream and garlic, because everything it’s better with garlic 😍

My boys love roasted broccoli and eat them by buckets. Such a easy and healthy side dish that will pair with anything. I add crushed red pepper to spice it up a bit. Looks so tempting!
