Crock Pot Pork Loin – Set & Forget!

This Crock Pot Pork Loin is the kind of dinner that solves the “what’s for dinner” question before your day even starts. You set it in the morning, and by the time you walk back in the door, dinner is handled.

The pork cooks low and slow with apples and onions, building that savory-sweet flavor while staying tender and juicy. And yes, there’s gravy – because that rich, homemade sauce is what pulls everything together.

My family loves this recipe, it’s a good one to make during the week or even a busy weekend. The long cooking time means I can set it, forget it, and get on with my day. Perfect for when life gets a little crazy, or you have a burst of inspiration to be organized on any given morning.

Key Recipe Ingredients

  • Vegetable oil. Used for searing and building flavor at the start.
  • Seasonings. Garlic powder, thyme, onion powder, salt and pepper bring a simple, savory flavor to the pork.
  • Chicken stock, soy sauce, and apple cider vinegar. This combo creates a rich, tangy, and slightly savory sauce. Use homemade chicken stock or store-bought broth – both work great.
  • Pork loin. You’ll need a 3 to 4 pound pork loin. This cut is perfect for slow cooking and turns tender and juicy.
  • Apples. Any variety works. Granny Smith gives a more tart flavor, while Gala or Honeycrisp leans sweeter.
  • Onions. Just peel, chop, and toss them in. They soften and add flavor as everything cooks.

How to make this recipe

Get prepped. Heat the vegetable oil in a large skillet over medium-high heat. In a small bowl, mix together the garlic powder, thyme, and salt and pepper. In another bowl, whisk together the chicken stock and apple cider vinegar.

Season and brown. Rub the pork loin with the seasoning, then brown on all sides in the hot skillet. Add the onions and apples to the crockpot, then place the browned pork loin on top.

Cook. Pour in the chicken stock mixture along with the soy sauce. Cover and cook on low for 6 to 8 hours, until the pork is tender.

Serve. Remove the pork loin along with the apples and onions from the crockpot. Let the pork rest for 10 minutes, then slice and serve.

To Make Gravy in the Crockpot

Remove all but 2 cups of liquid from the crockpot. In ½ cup of the removed liquid, whisk in the cornstarch until smooth. Pour it back into the crockpot and cook on high for 15 minutes, whisking constantly until thickened.

To Make Gravy on the Stovetop

Remove 2 cups of liquid from the crockpot. Add 1½ cups to a small saucepan and heat over medium-high heat. In the remaining ½ cup, whisk in the cornstarch until smooth, then add it to the saucepan, whisking constantly until thickened.

Kylee’s Notes

  • Use a premade herb blend in place of the garlic/onion/thyme – I recommend my homemade Italian Seasoning whenever a recipe calls for this kind of seasoning!
  • What to serve with Pork Loin? I love green beans and apples with the onions. You can add them to the crockpot during the last 30 minutes of cooking. Mashed potatoes or buttered noodles are always a good choice if you like carbs like me!
  • Need it sooner? Cook on high for 4 hours.

Instructions

  • Heat the 2 tablespoons vegetable oil in large skillet over medium-high heat.
  • Mix together 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon dried thyme, 1 teaspoon salt, and ½ teaspoons cracked pepper in a small bowl.
  • Whisk together 2 cups chicken stock, 2 tablespoons soy sauce, and 2 tablespoons apple cider vinegar.
  • Rub the 3-4 pound pork loin with the mixed seasoning, and brown on all sides.
  • Add 2 onions (quartered) and 2 apples (peeled, cored and quartered) to the crockpot, add the browned pork loin on top.
  • Pour in the stock, soy sauce & apple cider vinegar, place the lid on the crockpot and cook for 8 hours on low.
  • Remove pork loin and apples/onions from the crockpot.
  • Allow to rest for 10 minutes, then slice.
  • Serve with the onions, apples, and gravy.
  • Devour.

TO MAKE GRAVY IN THE CROCKPOT

  • Remove all but 2 cups of liquid. In ½ cup of the removed liquid, whisk in 3 tablespoons corn starch until smooth. Whisk back into the crockpot, and heat on high for 15 minutes.
  • Whisk constantly until thickened.

TO MAKE GRAVY ON THE STOVETOP

  • Remove 2 cups of liquid and add 1 ½ cups to a small saucepan, heating over medium-high heat.
  • In the remaining ½ cup of the liquid, whisk in the cornstarch until smooth, then add to the saucepan, whisking until thickened.
