Hi! Everyone should be back to school by now – I know we went back a little earlier than many of our friends, but I’m seeing all the posts on social media with all the first day pictures – I love it!
I’m ALSO seeing a lot of people post that their summer days are over and that the hunt for quick and easy dinners while they try to get on schedule with all the school, extracurricular activities, and appointments. Oh my.
I feel that pain. With 2 boys, husband, a full-time job, a blog and attempting to have a life… well. Dinner can be quite a struggle.
Having an easy rice bowl recipe up my sleeve and the ingredients easy to pull together from the fridge and pantry, this is perfect for Meatless Monday rice bowl night, or add some of your favorite protein and bump up the protein!
I like to put all the ingredients on the table and have the family pick and choose which ones to add, and how much. I’m shocked by what my children will eat when they see it as their choice!
Using pre-cooked rice is a seriously awesome shortcut. With a few other simple ingredients, you’ll be amazed at how quick this is and how yummy!

How to make Easy Caprese Rice Bowls
- Gather your ingredients
- Heat the rice in the microwave
- Add the pesto, and mix well
- Transfer to serving bowls.
- Top with cherry tomatoes, fresh mozzarella balls and fresh basil

Easy Caprese Rice Bowls
- 1.5 cups rice cooked
- ¼ cup basil pesto
- 1 cup cherry tomatoes
- 1 cup fresh mozzarella balls
- ¼ cup fresh basil leaves.
- Cook the rice as directed on the package.
- Add the heated rice, and the basil pesto to a large bowl and stir to combine (add more if necessary).
- Top with cherry tomatoes and fresh mozzarella balls.
- Garnish with fresh basil leaves (optional)
