IT’S FALL, Y’ALL. Can there be leaves on the ground, and crispness in the air, please? Hi Phoenix, AZ – I’m looking at YOU. I’m sure there is some law about posting about Fall before labor day, but I’m just super anxious for Fall to be here already.

It’s September, and I waited 3 whole days before sharing this with you. I feel like that’s an achievement because ever since I first started testing and tweaking this recipe, I’ve been drinking them ever since.

The appearance of Starbucks pumpkin spice lattes on the menu is a sure sign that cooler weather, cute boots, pretty scarves and holidays are on their way!! I live in hope.

This recipe contains real pumpkin, not just pumpkin spice. We begin by heating milk, maple syrup, pumpkin and spices until bubbling, but not boiling. Then we grab a shot of espresso, and add the hot milk to it.

Well, I can’t answer for the rest of the world, but it’s because it tastes like dessert! Pumpkin Pie reminds me of holidays and family and nostalgia. I’m not alone – did you know that in coffee shops there have been over 200 million cups sold in the US alone?

Yeah, it’s not going away anytime soon!

How to make this recipe

Make the milk base

Add the milk, pumpkin pie spice, maple syrup, and pumpkin puree to a saucepan, and whisk together. Heat gently until the mixture comes to a simmer, whisking regularly.

Assembly. Brew some espresso or strong coffee, and add it to your cup. You’ll need a double shot (4oz) of espresso. Pour the milk mixture over the top and mix together. Decorate with whipped cream and a little extra pumpkin pie spice. Devour.

Pumpkin puree means canned pure pumpkin, not pumpkin pie filling. There is a definite difference!

Make ahead, in bulk. You could make a HUGE batch ahead and keep it warm in a slow cooker. Then all you’d need is some hot coffee and everyone could pour their own, and top it with whipped cream (or not). It would be awesome to make this and do an outdoor activity – then come inside for a hot drink!

If you are into that idea, you’ll love my Crockpot Hot Chocolate. It’s kind of epic, actually.

Microwave instructions: Heat the milk, pumpkin, maple syrup and pumpkin pie spice in a large microwave safe container until just beginning to bubble. Whisk thoroughly, and continue as directed.

Substitutions/Additions

Milk: You could switch out the dairy and use coconut milk, almond milk or any milk you enjoy.

Sweeteners:– Maple syrup, agave syrup, and honey all go well in this recipe. Use your favorite! You could use more or less sweetener based on your particular taste.

Instructions

  • In a small saucepan, whisk together 1 cup milk, 2 teaspoons pumpkin pie spice, ¼ cup maple syrup, and ¼ cup pumpkin puree.
  • Heat gently over medium low heat until the mixture comes to a simmer, whisking regularly. Do not boil!
  • Brew some espresso or strong coffee and add it to a large cup. You will need 4 ounces shots espresso.
  • Pour the milk mixture over the top of the coffee and mix.
  • Decorate with whipped cream and cinnamon and a little extra pumpkin pie spice.
  • Devour.
