Easy Lemon Muffins with Crunchy Sugar Tops

These lemon muffins are one of those recipes I kept tweaking until they were exactly how I wanted them – soft, fluffy, and lemony without being too sharp.

They are ready in about 30 minutes, with a little coarse sugar on top for crunch. Perfect with coffee, easy to grab on the way out the door, and very freezer friendly too.

  • Flour. Regular all-purpose flour works best here and gives the muffins a soft, even crumb.
  • Sugar. Sweetens the muffins without overpowering the lemon.
  • Baking powder. Gives the muffins their lift and keeps them light instead of heavy.
  • Butter. Melt it, then let it cool slightly before mixing so it doesn’t warm the eggs too much.
  • Eggs. Use large eggs. Room temperature eggs mix more smoothly into the batter.
  • Milk. Whole milk gives the best texture, but another milk will work in a pinch.
  • Lemon juice and zest. The zest brings most of the lemon flavor, while the juice adds freshness and a little tartness.
  • Vanilla extract. Softens the sharper citrus notes and rounds everything out.
  • Raw sugar. Sprinkle it over the tops before baking for that crunchy, sparkly muffin top.

How to make this recipe

Mix the batter. Whisk the dry ingredients together in one bowl, then whisk the wet ingredients in another until smooth and well blended. Pour the wet mixture into the dry and fold everything together gently. Stop as soon as you don’t see any dry flour – the batter should be thick, a little lumpy, and easy to scoop.

Fill and bake. Scoop the batter into the prepared muffin cups, keeping them as even as you can so they bake at the same rate. Sprinkle the tops generously with raw sugar, then bake until the muffins have risen, the tops are lightly golden, and the centers spring back when gently touched. A toothpick should come out clean or with just a few soft crumbs.

Kylee’s Notes

  • Use room-temperature eggs if you can. They mix more smoothly with the melted butter and help keep the batter even.
  • Let the butter cool slightly. If it is too hot, it can start cooking the eggs when everything is mixed together.
  • Zest before you juice. Much easier, and you want only the yellow part of the peel. The white pith underneath can taste bitter.
  • Watch them near the end. Pull the muffins when the tops are lightly golden and spring back when touched. Overbaking will dry them out quickly.

Store muffins in an airtight container at room temperature for up to 3 days.

Freezer
Cool completely, then wrap tightly and freeze for up to 3 months.

Recipe Tips & Troubleshooting

  • The muffins are dense. The batter was probably overmixed. Stir just until the flour disappears – a few lumps are exactly what you want.
  • The muffins are dry. They likely baked a little too long. Start checking early and pull them when the tops spring back and a toothpick comes out clean or with a few soft crumbs.
  • The lemon flavor is too mild. Add a little more zest next time rather than more juice. Zest gives you stronger lemon flavor without changing the batter as much.
  • The muffins did not rise well. Check that your baking powder is fresh and make sure the oven is fully preheated before the pan goes in.
  • The sugar topping melted into the muffins. Sprinkle the raw sugar on right before baking and use a coarse sugar rather than regular granulated sugar.
  • The muffins stuck to the liners. Let them cool for a few minutes before peeling the liner away. Very warm muffins are more likely to stick and tear.

Light, fluffy lemon muffins made with simple ingredients and just enough citrus flavor to feel bright without being sharp. These are everyday, grab-and-go muffins with a tender crumb and a sparkly top. They bake up soft, not dense, and hit that balanced sweet spot that works for breakfast, snacks, or a quick something with coffee.

Ingredients
 

  • 2 cups flour
  • ¾ cup granulated white sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter melted and cooled slightly
  • 2 large eggs
  • ¾ cup milk
  • 1 tablespoon lemon zest
  • ¼ cup lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons raw sugar for topping

Instructions

  • Get prepped. Heat the oven to 375°F (190°C). Line a standard 12-cup muffin tin with liners or lightly grease it. Zest and juice the lemon. Melt the butter and let it cool slightly. Measure out the remaining ingredients.
  • Mix the dry ingredients. In a large bowl, whisk together the flour, granulated white sugar, baking powder, and salt until evenly combined.
  • Mix the wet ingredients. In a separate bowl, whisk together the melted butter, eggs, milk, lemon zest, lemon juice, and vanilla extract until smooth.
  • Combine. Add the wet ingredients to the dry ingredients and gently stir just until combined. The batter should be thick and slightly lumpy. Do not overmix.
  • Fill and top. Divide the batter evenly between the muffin cups, filling each about three-quarters full. Sprinkle the tops with coarse sugar.
  • Bake. Bake for 16 to 18 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
  • Cool. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Zest the lemon before juicing for easier handling.
  • Mix the batter gently to keep the muffins light.
  • Fill muffin cups evenly so they bake at the same rate.
  • Sprinkle sugar on top right before baking so it sticks.
