Smothered Pork Chops (Crockpot Recipe)

I love a good crockpot dinner – this is a really quick cooking one – perfect for when you are at home, and just want to free yourself up for other things vs cooking. Most crockpot recipes take all day, so I really appreciate this one for when I’m home a bit early!

As with most smothered pork chop recipes, we dredge some pork chops in some seasoned flour, then brown in a skillet. We dump in a slow cooker with some onions. Mix the leftover flour with some stock, and pour it over. With a prep time of fewer than 15 minutes has to be a winner, right?

To add even MORE flavor, scrape up any browned bits from the bottom of the pan used to brown the pork chops, and add to the gravy.

A little heavy cream stirred in right before serving with make the gravy super creamy and delicious.

They’re cooked when the internal temperature is 140 FT

  • Flour. this is used to coat the pork, and then made into the gravy.
  • Mustard Powder, Garlic Powder, Pepper, Seasoned Salt. These simply season the flour before we brown the pork and form the base of the onion gravy.
  • Pork Chops. I used boneless center-cut (thick cut) pork chops, but bone-in pork chops work well too.
  • Onion. Slice this up thinly, so they cook well.
  • Cooking Oil. For browning the pork. Use vegetable oil or olive oil.
  • Chicken Stock. Grab a carton from the store. or make your own or use chicken broth.

How to make Smothered Pork Chops in a Crock Pot

  1. Combine flour and seasonings in a zip lock bag.
  2. Add the pork chops one at a time to the bag.
  3. Shake the pork chops up to thoroughly coat them in the seasoned flour.
  4. Add remaining flour/seasonings to a bowl and whisk in the stock until smooth.

  1. Heat the oil in a skillet (any skillet is fine, I use a cast iron skillet most of the time)
  2. Cook the pork chops a few minutes per side until browned (not cooked through.
  3. Add pork chops to the crockpot.
  4. Add the onions.
  5. Pour flour/stock mix over the chops.
  6. Cook for 2-3 hours on low (internal temperature should be 140 F) Remove pork chops from crockpot and serve with the onions and sauce over the top. Season with salt and pepper if desired.

Ingredients
 

Instructions

  • In a large ziplock bag, combine ¾ cup all-purpose flour, ½ teaspoons mustard powder, 1 teaspoon garlic powder, 1/4 teaspoon cracked pepper, and 1/2 teaspoon seasoned salt.
  • Add 4 1/2 inch thick boneless pork loin chops, one at a time, and shake to coat.
  • In a large skillet, brown chops in 2 tablespoons vegetable oil on each side.
  • Transfer the chops to a greased 5 quart slow cooker, add 1 large sliced onion.
  • Place leftover flour from the ziplock in a small bowl; whisk in 2 cups chicken stock until smooth. Pour over chops.
  • Cover and cook on low for 2 to 3 hours or until meat is tender. (In my crockpot – 2 hours was plenty).
  • Remove pork to a serving plate and keep warm. Whisk pan juices until smooth; serve with pork.
  • Devour
