Thankfully, this is an easy recipe to dump and run! Literally, we throw the meat in a slow cooker, add the seasonings, peppers and juice and some butter. Pop the lid on, set it for 8-10 hours on low (it will be even better with a long, slow cook time) and go!
Come home to the inviting, mouthwatering smell of dinner already cooked. Make a few side dishes, and call the fam to grab plates.
You can add onion, carrot or potatoes to the pot if you wish!

Yes, you can cook it in a covered Dutch oven at 275°F for about 4-5 hours.

Yes, you can mix dried parsley, dill, garlic powder, onion powder, and dried chives to make your own ranch seasoning.

- Boneless chuck roast. A well-marbled cut of beef that becomes super tender and flavorful when slow-cooked all day. You can also use brisket or bottom round roast.
- Dry Ranch dressing mix. Adds a tangy and herby flavor to the roast. You can make your own mix if preferred.
- Au jus gravy mix. I use a packet of au jus gravy mix, and it provides a rich, savory base. If unavailable, you can substitute with brown gravy mix.
- Butter. A stick of butter, cut into pieces. Adds richness and helps create a flavorful sauce. Salted or unsalted butter works just fine.
- Pepperoncini peppers. Adds a mild heat and tangy flavor. Banana peppers can be used as a substitute.
- Pepperoncini juice. This is the liquid from the jar of pepperoncinis. You can also use a splash of vinegar or lemon juice.

Get prepped
Measure out the ranch seasoning mix, au jus gravy mix (if using from a jar instead of 1oz envelopes).
Cut the butter into pieces, measure out ¼ cup pepperoncini juice and grab 6-8 pepperoncinis from the jar.
Prepare the roast
Place the roast in the slow cooker. Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the roast.
Add remaining ingredients
Place the butter pieces on top of the roast. Arrange the pepperoncini peppers around the roast and pour the pepperoncini juice over the top.
Cook the roast
Cover and cook on low for 8 hours, or until the meat is tender and easily shreds with a fork.

Serve
Shred the meat with two forks, mixing it with the juices in the slow cooker.

If you want to thicken the gravy – remove some of the cooking juices (or use beef broth) and mix with some cornstarch. Whisk back into the pot, and cook for another few minutes.
What to do with leftovers
Refrigerator: Store any leftover pot roast in an airtight container in the refrigerator for up to 3-4 days.
Reheat: Reheat in a saucepan over low heat, or in the microwave until warmed through.
Freezing instructions
Freeze cooked Mississippi roast in serving sized containers. This will store in the freezer for a few months. Thaw and reheat until piping hot.
