We’re in the throes of back to school and a few other changes going on, which makes weeknight dinners a grab-and-go or a scramble-and-shovel. Yeah. Totally made up that last term “scramble-and-shovel”
I know it’s crazy, but just because it’s 6pm and I’ve just gotten home and need to put dinner on the table, doesn’t mean that I don’t want it to be GOOD!
Hotdogs, mac n cheese, and grilled cheese sandwiches have their place (especially at my house, where oatmeal for dinner is considered by some as the height of haute cuisine), but nothing beats a really well-flavored pork chop.

Ingredients for Blue Cheese Crusted Pork Chops
It really couldn’t be much simpler, right? Just blue cheese, breadcrumbs, seasoned salt, pepper, parsley, olive oil and pork chops.
This recipe is so simple, but has such wonderful flavors. It’s tasty and impressive enough that if say, someone was coming for dinner on a weeknight, and you just rolled in the door at 5:30… you could still prep and cook this, and have time to make a few sides as well – and pour yourself a glass of wine. Emphasis on pouring yourself a glass of wine.
We really enjoy this – even the kids deign to eat some of it – one of them likes blue cheese. The other says he doesn’t (he’s wrong), but this is one of those dinners where I don’t care if they like it. I kind of hope they don’t, so I can eat their share. I know. Mom of the Year over here.
I totally scrape the skillet for the crusted breadcrumbs/blue cheese that got extra crispy in the oven. Not even ashamed.
How to make Blue Cheese Crusted Pork Chops
So glad you asked! Since this is a recipe website, I kind of ASSUMED, but, you know…
- Mix the crust in a bowl, and kind of pile it on some seasoned pork chops.
- Squish it down so it’s stuck on there.
- Add to a heated skillet and brown the bottom (optional)
- Pour yourself some wine
- Put the skillet in the oven to finish cooking.

- 2 large pork chops
- 1/2 cup blue cheese crumbled
- 1 cup soft bread crumbs
- 1/4 tsp seasoned salt
- 1/4 pepper
- 1 Tbs olive oil
- 1 Tbs parsley finely chopped
In a small bowl, stir together bread crumbs, cheese, onion, salt, and pepper.
Add enough oil mix well. Set aside.
Season the pork chops on both sides with salt and pepper.
Spread crumb mixture evenly on chops, and cook in skillet for 2 minutes.
Preheat the oven to 400F, and heat an oven-safe skillet to medium.
Add some olive oil to the skillet and heat.
Cook pork chops for 2 minutes, in the skillet - then transfer to the preheated oven. Cook 6-8 minutes until internal temperature on a thermometer reads 145F.
Broil for a few minutes until crumbs are browned and cheese starts to melt - watch carefully!
Remove from heat and let rest for 5 minutes before serving.
