Delightfully buttery and deliciously sweet, these Caramel Rice Krispie Treats are a great alternative to the traditional ones using marshmallows. These will become a new favorite for everyone!

I’m so excited to share this recipe with you!
I found this recipe written on a very well marked piece of paper, pasted into a big recipe book that my mother used when I was a kid. I believe we used to call them Rice Bubble Toffee – but I think they’re better described as above, or as Caramel Rice Krispie Squares.
This recipe uses a basic caramel sauce recipe, with the addition of honey – it really does make a difference!!
I love that they come together super fast, and yet – SUPER delicious. Isn’t that always the way? The simpler the better, right?
I also make these in little muffin cups (grease them so they don’t stick) and using a small cookie scoop to pack it in, and create yummy little domed balls of heaven. I guess if I was to make these in muffin cups ALL the time, I’d have to rename to Caramel Rice Krispie Balls, but I think I’ll stick with what I have!
However you choose to make them, they’re delicious in either form. Resist the urge to cut them before they’re fully cooled, or they can become crumbly. And you’ll have to lick the crumbs off your countertop. Okay, maybe that’s just me.

How to make Caramel Rice Krispie Treats

In a large saucepan (heavy bottomed) melt the butter, brown sugar and honey.
Bring to a boil and cook for 5 minutes (watching carefully, and stirring often).
Remove from the heat and add in the rice krispie cereal, and mix until well combined.
Either press the mixture into an 8×8 baking pan using a spatula or wax paper to press down, or scoop into domes into mini muffin cups.
Allow to cool completely before cutting into squares.
Devour.

You can spray the baking pan with cooking spray if you wish. However, I don’t and it works out fine.

Recommended Equipment
Ingredients
- 4 oz butter
- 4 oz dark brown sugar
- 2 Tbs honey
- 3 cups rice krispie cereal
Directions
- In a heavy bottomed saucepan, melt together the butter, brown sugar and honey.
